The film kicks off with a dramatic scene where a man is recklessly smashing his car while his wife shouts at him in front of a gathering crowd of neighbors. Just then, a sheriff’s truck arrives, and Joe Bill Rack Ranklin (Toby Keith) along with his partner Lonnie (Rodney Carrington) intervene to defuse the escalating situation. The troubled husband suspects his wife of infidelity, accusing her of cheating with another man, who later, in an embarrassing twist, is spotted by Lonnie in nothing but his underwear. Ignoring this revelation, the husband lashes out further by ruining the lover’s truck with a baseball bat. However, Rack informs him that the damaged vehicle actually belongs to Jay Bob Simpson (who ultimately retaliates against him).

As the story unfolds, Rack returns home late only to find his girlfriend Cammie (Gina Gershon) furious and leaving him, tragically running over his beloved lawnmower in the process. The next day, Sheriff Landry (Tom Skerritt) assigns Rack and Lonnie, alongside another deputy named Skunk (Ted Nugent), the responsibility of monitoring two fertilizer tanks at night. Lonnie, never one to miss a beat, brings his lazy but lovable dog along for this unusual nightwatch duty.

Things heat up when a group of Mexicans attempts to make off with the fertilizer tanks, only to be thwarted by the trio. Their success leads them to celebrate their victory at the local tavern where they toast with Sheriff Landry, following the local saying: > “Whiskey for my men. Beer for my horses.”

The next day, Rack runs into the troublemaker Johnny Franks (Chad Brummett), who warns him about a potential threat from the brother of a recent arrestee, Tito. Dismissing the warning, Rack heads into town, where the waitress informs him that his ex-girlfriend Annie Streets (Claire Forlani) is back in town. Eagerly, he seeks her out but is met with hostility from her stepfather, Buck Baker (Barry Corbin), who mocks his career as a deputy. Nevertheless, Rack finds a way to reconnect with Annie, setting up a date.

Meanwhile, tensions rise at the sheriff’s office when District Attorney Levine (Curtis Armstrong) discusses the case against Tito with Sheriff Landry. Levine worries that the theft charges won’t hold up in court. However, after Rack presents new evidence revealing that Tito is entangled with a drug cartel, the momentum shifts in their favor.

Romance blossoms for Rack and Annie during their date, but a phone call interrupts their bliss. Rack learns that Annie has been kidnapped by Tito’s brother Manuel ([Carlos Sanz]), who demands that Rack brings Tito to him by noon the next day, or Annie will face deadly consequences. Rallying his friends, Rack calls upon Lonnie and Skunk, and they venture into Mexico with the dubious assistance of Tyrone Honeybee (Tracy Morgan), a corrupt border guard.

The trio devises a plan to rescue Annie, leading to a showdown with Manuel and his gang at Rancho Cantina. The stakes are high, and just when it seems that things can’t get more chaotic, it becomes increasingly clear that Buck is mixed up in this mess too. As bullets fly and tension runs high, a series of convoluted events unfold: Tito escapes bondage, and in a dramatic moment, Lonnie’s secret FBI identity is revealed.

Ultimately, Buck tries to regain control, but Rack outmaneuvers him, resulting in a fierce confrontation. Buck meets his end at Rack’s hands, allowing the heroes to finally breathe a sigh of relief. They return to the tavern amidst jubilant celebrations, greeted as heroes for their courage while Sheriff Landry, initially skeptical, joins in the festivities. Ultimately, Rack and Annie reaffirm their bond, promising new beginnings amidst the chaos that has brought them back together.
